Nutrition Biochemistry

addresses research in basic science and experimental nutrition through experimental studies and clinical trials, aiming to elucidate biochemical mechanisms that associate diet with the etiology of Chronic Noncommunicable Diseases, as well as to identify biomarkers of health and disease. These biomarkers help to develop better tools for the diagnosis and monitoring of nutritional treatment of these diseases.

Food Science and Technology

addresses research related to the characterizationthe
nutritional composition and bioactive compounds of
foods, as well as the physical and chemical
transformations resulting from culinary and industrial
processes. The studies aim to promote the
development of new food formulations, incorporating
innovative technologies that consider the production
of sustainable foods. It also includes research that
investigates the metabolism of bioactive compounds in
these foods, as well as the effect of the compounds in
the prevention and treatment of NCDs, integrating in
vitro studies, animal models and with human beings.

Nutritional Epidemiology 

addresses research that investigates the determinants of health and their interrelations with food and nutrition from the perspective of public health nutrition. The studies seek to recognize and understand nutritional problems in population groups, identifying public policies and intervention actions that can minimize these problems. Research in this field involves several methodologies and areas of knowledge, guided by interdisciplinarity and incorporating recent advances in science as an effort to recognize the environmental, social and individual determinants that interact in the occurrence of nutrition/malnutrition phenomena. The studies developed in this line also evaluate technologies, processes and resources that make it possible to act on the different nutrition problems in the country from an integrated perspective at the interface with the Human Sciences.
